A few weeks ago I had a dinner date planned with my lovely friend Dehlia. Our destination for the night: Wyers, a city center hotspot in the newly opened Kimpton De Witt hotel. I’d already noticed the buzz around Wyers on Instagram. Stunning photos of Chef Sam “SammyD” DeMarco’s menu were shared as teasers before the opening. We were beyond curious and thrilled to discover what this place has to offer.
The tone is set upon entering the restaurant, with a cozy ‘living room’ setting and open kitchen (great for peeking into some of the backstage magic!). With a refreshing cocktail in one hand and the menu in the other, Chef SammyD came to greet us personally. Now I’ve met my share of chef’s in Amsterdam, but I have to say that Sam is truly the beating heart of Wyers. The undeniable love for his signature cooking style comes through in both the beautiful dishes as well as his sincere passion for food. His lollipop chicken wings and homemade ‘bitterballen’ blew us away. As for the main dishes, you have to try his chicken ‘puttanesca’. However, the absolute showstopper for me was the roasted Dutch lamb (chop, braised shoulder, couscous, spring peas, carrots, curry oil, mint-jalapeno pesto). I can’t even begin to explain what that dish did to me.
On a final note: I have to say again that for the best Wyers experience, I totally recommend that you book a chef’s table. You don’t wanna miss out of the chance to dine at SammyD’s kitchen table! 🙂
