Chapter 5: Advieh – The Fragrance of Persia

Advieh is the Farsi word for ‘spice mix’. This mixture is widely used in Persian cuisine and although there are some minor variations in different Advieh recipes (and as most of us simply DON’T live in Iran) I’m sharing my own recipe with you today. As this mixture of spices will be used in future Persian Dishtales, the recipe I’m sharing is for long term use in your own kitchen. Although today’s post is not a beautiful Persian dish for you to cook this weekend, I am positive that you’ll fall in love with the fragrance of Persia!

To get that beautiful fragrance and (eventually) taste it’s important to have the right balance of different spices. Trust me when I say that experimenting with over 50 different combinations of quantities led to this specific recipe that I use in my own kitchen. The power of this spice mix is not only in the incredible fragrance, but also the versatility of its use. Persian cuisine is all about combining the right ingredients and spices to get that well balanced structure of flavor and smell. The Advieh spice mix is a crucial element of many Persian dishes.

Chapter 5: Advieh – The Fragrance of Persia

BUY:

  • 2 tbsp ground cardamom
  • 2 tbsp turmeric
  • 1 tbsp ground black pepper
  • 1 tbsp ground cinnamon
  • 1 tbsp ground cumin
  • ½ ground nutmeg
  • 1 tbsp ground coriander
  • ½ ground garlic powder

DO:

  1. Simply toss all spices in a bowl, mix well & start cooking! 🙂
